Ingredients:
2 1/4 Cups Gluten Free Flour
1 tsp Baking Soda
1 tsp Salt
1 Cup Palm Shortening
3/4 Cups Granulated Sugar (or Xylitol)
3/4 Cups Brown Sugar
1 tsp Vanilla
2 Eggs
Directions:
- Preheat the oven to 357 degrees
- Combine Flour, Baking Soda and Salt in a bowl
- In another bowl beat these things together, in this order:
- Slowly mix in the dry ingredients. It will work with a mixer at first, then be too thick for that, but you much mix it thoroughly.
- Fold in Chocolate Chips and nuts (if desired – I like to add walnuts)
- Put tablespoon size drops on a cookie sheet lined with Parchment paper
- Bake for 9-10 minutes or until golden brown. Makes 3-5 dozen.
