GFCF Tollhouse Cookies

Ingredients:

2 1/4 Cups Gluten Free Flour
1 tsp Baking Soda
1 tsp Salt
1 Cup Palm Shortening
3/4 Cups Granulated Sugar (or Xylitol)
3/4 Cups Brown Sugar
1 tsp Vanilla
2 Eggs


Directions:

  1. Preheat the oven to 357 degrees
  2. Combine Flour, Baking Soda and Salt in a bowl
  3. In another bowl beat these things together, in this order:
  4. Shortening
    Granulated Sugar
    Brown Sugar
    Vanilla
    Eggs (one at a time)

  5. Slowly mix in the dry ingredients. It will work with a mixer at first, then be too thick for that, but you much mix it thoroughly.
  6. Fold in Chocolate Chips and nuts (if desired - I like to add walnuts)
  7. Put tablespoon size drops on a cookie sheet lined with Parchment paper
  8. Bake for 9-10 minutes or until golden brown. Makes 3-5 dozen.
